Because Shabbat is the ultimate form of worship of the Creator (It is an imitation of the Creator who rested on day 7. It is obedience. It is a time to meditate and to observe creation. Etc.) when I do Shabbat to its fullest Yhwh sees this worship. So my next work week will be seen by Yhwh and blessed. Additionally the Exodus verse here uses the the phrase “Shabbat shabaton” jps translates it “Shabbat of complete rest”. It’s a repeated word which the Hebrew does to emphasize or to say “great” or “very” or “complete”.
There are sects of Judaism and not even sects but specific individual synagogues that won’t do shul on Shabbat and do it Sunday morning or on Saturday night or Friday night before sundown so as to make sure it is complete rest for the whole of the yachad. I believe this myself. It may be the origins of why the early Yeshua disciples gathered on Sunday or Saturday night more likely.
Coming likely from the more conservative Essene groups. They were of the opinion that gathering on Shabbat for study was breaking Shabbat. I could easily see this theory having plausibility as to why Acts says Sunday (not because of the resurrection - which is only a theory) but because they wanted to be as perfect to Torah as possible (as was Yaakov hatsadik). It certainly wasn’t a supersessionist desire like the Sunday morning church requirement became!
